Roasted Veggies Tart

Yotam Ottolenghi’s recipe for “Very Full Tart” inspired my rainy day adaptation.  Yummy caramelized red and yellow onions seasoned with chervil, roasted eggplant, sweet potato, yellow squash sprinkled with herbs de Provence, roasted red peppers, feta cheese, ricotta and a rich custard with heavy cream and eggs.
