BUT…..let’s talk about new news for Grilled Cheese Sandwiches.
#1 Consider the Bread- We just tried Forbidden Rice Sourdough Bread. A tender flavorful interior and a crispy crust adds to its attractiveness and health appeal. (Purchased 1/2 loaf at Whole Foods.)
#2 Yes, there is cheese. Any kind you wish, Roy likes Extra Sharp White Cheddar already cut into squares- no need to dirty a knife. Pat requires Lactose Free Cheese, luckily readily available in the grocery store, Made by Cabot Cheese Farmer Cooperative.
#3 The Vegetable Layer- Yesterday I thawed a brick of chopped spinach, then squeezed it of most liquid. Next I melted some butter, followed by a chopped shallot and 1 clove minced garlic in a medium saute pan. When slightly translucent, add spinach and saute till fragrant and dry.
#4 The Put Together: Butter both slices of bread. Lay 1 slice on its’ unbuttered side, topped with the other slice, buttered sides together. Spread chopped spinach on one slice of bread, topped with cheese slices. (or roasted red pepper slice)

The Last Step: Rinse out the Spinach pan. heat to Medium. Place sandwich in skillet. Toast till slightly brown. Flip. when cheese melts and other side is toasted, Remove and enjoy.
