Not only is this a versatile recipe that can double as an Appetizer (sip soup), Mocktail, or Cocktail (shooter) but also an Intermezzo (palate cleanser) in a formal dinner or an afternoon pick-me up.
Those 3 main ingredients are watermelon, a fresh lime and fresh ginger. Salt is always a must with watermelon. And a stick blender helps a lot.
As a cocktail, stir in vodka, gin, prosecco or champagne. Serve in a martini glass.
Makes 4 cups
4 cups seedless watermelon cubes
1 teaspoon grated fresh ginger*
½-3/4 teaspoon fresh lime zest
1 tablespoon fresh lime juice
½ teaspoon kosher salt
Place watermelon in a food processor or blender or, if using a handheld blender, in a bowl. Process until all cubes are liquefied.
Pour into a spouted container; stir in ginger, lime zest and lime juice. Taste; add salt. Serve.
*To grate fresh ginger, scrape the ginger finger with the back of a spoon, then grate on a microplane.
