As I tossed the toasted barley with the flavorful dressing, halved cherry tomatoes and diced roasted red pepper with fresh mozzarella pearls, fresh basil and fresh parsley, all I could think of was Christmas.
P.S. To my Canadian friends who save me the gorgeous LCBO magazines, I want to share that I was inspired by a recipe I found there. It needed adapting but wow, what a winner!
