Soft cookies with bits of rhubarb. No need to chill dough. The rhubarb dice is still frozen and keeps the cookies from spreading.
Cookies contain chopped white chocolate with some left for drizzling on top. Cookies were gone before I took photo of Drizzled Rhubarb Ranger Cookies.
