Sweet potatoes make a perfect landscape for a weekly meal. Stuffed with spinach (recipe follows) or even broccoli.

Sweet Potatoes Stuffed with Spinach and Feta Cheese

  • 2 medium sweet potatoes (8-10 ounces each)
  • Olive oil
  • Butter
  • 1 (8 ounces) bag washed baby spinach
  • Minced garlic
  • Cayenne pepper
  • Feta Cheese

Prepare Sweet Potatoes following the Quick Sweet Potato with Crispy Shell recipe. (Previous post)

Meanwhile, heat 1-tablespoon olive oil with 1-tablespoon butter in a 12-inch skillet.  Add ½ of the spinach leaves. Sprinkle with minced garlic and toss to combine.  When slightly wilted, add remaining spinach, toss; remove from heat.  Cover.

Push ends of roasted sweet potatoes inward to form a pocket.  Crumble 1 tablespoon of feta into each pocket.  Fill each pocket with sauteed spinach.  Top with  more feta or roasted cashews. YUM!
